Lime Jello Salad with Minute Rice

Were there any great artists from birth? What about poets, writers, musician, painters, singers, and cooks? I think we all know this one the answer is no. Each person developed their talents over the years and had teachers coaching them along.

 I decided to help young women at a Community College my Mother loved to attend. I signed up to volunteer for a beginners cooking class for young brides. This was so enjoyable and gave me joy once a week to help these young brides learn how to cook. I have many lasting friendships over the years and keep in touch with a few of the young women who were in these classes.

 Good cooks or disasters?

Today I have decided that instead of talking about how to cook I want to do a series on cooking disasters. What was the funniest cooking disaster you ever made in your kitchen? When I grew up at the end of the depression and WWII food was scarce and we could not waste any we had. My Mother would not allow me in the kitchen to cook. She was afraid that I would waste the food we had in our home.

 When growing up this did not change I was not allowed to cook in our home. My Mother was a fantastic cook and had learned from her Mother and Grandmother. She said that many times over she regretted her decision to never teach me how to cook. She never thought about me needing to learn the art of cooking and preparing me for the time I got married and had children of my own.

 My first cooking experiences were one to remember. I tried so hard to cook but each time I could see the reaction on my husband’s face when I served dinner on the table. It was not until Grandma Simpson came to stay with us for 6 months that I finally learned how to cook.

 Teaching cooking to new Brides:

I decided to teach young women how to cook so they never had to experience what I did when I was first married. I remember this one young girl she was 20 years old. We gave the young women a cooking assignment at the end of each class and the next week they were to bring in their dishes they had cooked.

 The day before cooking class my young student came to our home unexpectedly. She ran the door bell and was standing on the front porch with her Jello Salad she mad made. She was so excited at her creativity that she wanted to share this with me before the next evening class.

 She came in and started to explain how she had created her salad. She said that she loved rice and Jello and had decided to make a Jello salad with the new Minute Rice that was in the stores at this time.

 Preparation of her Salad:

  •  1 package of green lime Jello
  • 1 cup of hot boiling water
  • 1 cut of Minute Rice uncooked
  • 1 cut of cold water
  • 1 glass dish for the salad

 How she prepared her dish:

 In the bottom of the glass baking dish add 1 cup of minute rice uncooked and spread out evenly over the bottom of the dish. Add your package of lime Jello on top and your 1 cup of hot water. Stir to dissolve your Jello and cook your rice. Add you 1 cup of cold water and put in the refrigerator until the Jello sets. Serve as a salad at dinner.

 I read her recipe and asked her why she didn’t cook her rice before hand. She said OH no minute rice is instant rice and when you add the hot water it is cooked. I had never tried the minute rice in the stores so I took her word for this one.

 Taste Test:

We sat down at the dinning room table and she served me a dish of her salad. She had the happiest look on her face when she served me. I was happy that she was here sharing with me one of her cooking assignments.

 I took one bite of her salad and found that I could not even eat it. The rice was uncooked and it cracked and crunched when I bit into it. I saw the tears in her eyes as she tried her salad finding out the rice never was cooked with the hot water.

Learn from mistakes:

 I encouraged her with the kindest words possible and told her to go back home and try this again. It was a wonderful idea and would make a great salad if she would cook the rice first before adding it to the Jello.

 The next evening at cooking class she showed up with her Orange Jello and Rice salad. This time she cooked her rice and everyone in the class loved her salad. She was so excited and happy.

 The moral here is we think that it might work so we try. When we find out we made a terrible error we throw it away and try again. Every good cook has many mishaps in their kitchen and many experiments they do with food. Never stop trying and even if one is a mistake learn from it and try again.

 I want to do a series on cooking disasters and wish each one of you would comment on what your worst disaster was in your kitchen. I think this could make a very funny series and we can all learn for each other mistakes. I wait on your comments and I want to get a good laugh from you. I have many more to make you smile with and will start writing them up and putting them here for everyone to read.

Sour Cream Rice

SOUR  CREAM  RICE

Ingredients

  • 1 c. uncooked rice
  • 1 lb. sharp cheese
  • 1 pt. sour cream
  • Crushed cayenne
  • Salt to taste
  • 2 tbsp. sugar

Prepare

Cook rice.  In casserole dish, put a layer of this cooked rice.  Add half of the sour cream and sprinkle with sugar.  Grate cheese and spread a layer of this over the sour cream.  Sprinkle this with crushed pepper.  Repeat, filling the casserole with two layers.  Bake at 350 degrees for 30 minutes until very hot and cheese is melted.  Serves 6.
